State Inspectors Document Multiple Infractions at Popular Italian Eatery

Residents of Osceola County, with a projected population of 489,842 in 2025, depend on local restaurants to uphold stringent food safety standards.

 

On November 12, 2025, Di Carlo Ristorante, located at 2095 E Irlo Bronson Memorial Highway in Kissimmee, received a warning from the Florida Department of Business & Professional Regulation after state inspectors documented 23 violations during a routine inspection.

 

The inspection revealed five high-priority violations, three intermediate violations, and 15 basic violations.

 

While these infractions require further review, they are not considered an immediate threat to public health.

 

A follow-up inspection is mandated.

 

High-priority violations included a dishwashing machine's chlorine sanitizer measuring 0 parts per million, indicating inadequate sanitization.

 

Inspectors also found raw beef roast stored over dough in a hallway reach-in cooler and pooled eggs placed above crushed tomatoes on the cookline.

 

The operator corrected the egg placement during the inspection.

 

Additionally, bread rolls were stored in non-food-grade grocery bags, and a vacuum breaker was missing at the mop sink faucet.

 

A stop-sale order was issued for three salmon fillets that were fully thawed while still in reduced oxygen packaging.

 

Intermediate violations noted included the use of a handwash sink for purposes other than handwashing, with an operator observed filling a pan with water from the cookline handwashing sink.

 

The same sink lacked paper towels and soap, with the soap violation marked as a repeat offense.

 

Basic violations ranged from a buildup of food debris on equipment door handles to unsecured carbon dioxide tanks.

 

Repeat violations included torn gaskets, broken cooler handles, cracked floor tiles, and cleanliness issues in reach-in coolers.

 

Inspectors also documented a non-functional walk-in cooler and freezer; however, the operator provided a work order, and the issue was corrected during the inspection.

 

It's noteworthy that in June 2023, Di Carlo Ristorante faced temporary closure due to health violations, including roach activity.

 

During inspections on June 9 and 10, 2023, the restaurant was cited for multiple violations, leading to a closure until corrective actions were taken.

 

Despite these challenges, the restaurant holds a 4.8-star rating based on 1,474 Google reviews and is described as an unassuming family-owned establishment with Venetian-style art, serving Italian fare, including homemade bread.
